Preheat oven to 375 degrees. Bake 30-50 minutes depending on your oven.
Crust: 4 cups flour
2 cups sugar
3 sticks oleo (or an equivilent amount of Brummel & Brown)
Combine until crumbly. Press 1/2 of crust mixture into 11' by 14' pan. To remaining crust (the other half), add 1 tsp. cinnamon. Mix and sprinkle over top of filling-see below.
8 cups sliced & diced, peeled & seeded zucchini
2/3 cup fresh lemon juice
Bring 1 cup of water to boil. Add lemon juice and zucchini and simmer about 20 minutes.
Add: 1 cup sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
Simmer 1 minute until mixed. Make crust-see below. Then add 1/2 of crust mixture to thicken (place on top of the filling.)
Bake 30 to 50 minutes at 375 degrees.
